Healthy and fresh summer recipes

Hot temperatures may leave us feeling too lazy to cook. We avoid hot dishes at all costs and end up making the same old salad as always.

The key is to keep hydrated, avoid eating carbohydrates after midday and replace fried snacks with fruits amd nuts.

Fortunately, there are many foods that are friends of the summer and with which we can make delicious, varied and healthy recipes.

Here are a few suggestions for you!

GAZPACHO

Of course, the star dish of the summer, along with other cold soups.

Ingredients (for 2 people): 6 ripe tomatoes, 1/2 small cucumber, 1/4 green pepper, 1 garlic clove, bread, 3 tablespoons oil, 1 tablespoon vinegar. And to top the soup, you could add a hard-boiled egg and cubed cured ham.

Keep the skin on the tomatoes since this is where many vitamins are located that fight free radicals. Blend all ingredients together until smooth.
Eating it daily protects the skin against UV rays and reduces cholesterol.

CREAM OF MELON SOUP

You can also make it with cucumber. In both cases, it is a refreshing and hydrating dish, with many vitamins and nutrients.

Ingredients (for 2 people): melon or cucumber, 1 pot low-fat fresh cheese, salt.

You could replace the cheese with cream, which would make it lower in calories, but still just as good.

CHICKEN BROCHETTE

To stop barbecues from making you pay the price later, you don’t have to give them up, just make them as healthy as possible.

Ingredients (for 2 people): 1 chicken breast, a handful of mushrooms, 1 avocado, oil, parsley, black pepper.

Grill the chicken and mushrooms and then thread them onto the skewer with the avocado. Mushrooms also prevent swelling as they help us to not retain water.

RICE WITH SALMON AND SHRIMP

For this dish we recommend using basmati rice, as it has more nutrients and fewer fats and cholesterol. In addition, it does not have gluten, so it is suitable for celiacs.
And salmon is the fish with the most Omega 3, as well as vitamins A and D, which repair and protect the skin.

Ingredients (for 2 people): 2 cups basmati rice, cubed salmon, cooked shrimp, spinach leaves, oil and vinegar.

Serve nice and cold 😉

QUINOA, SPINACH AND FRUIT SALAD

Easy to make and very very healthy. Just mix these ingredients together:

Ingredients (for 2 people): 1 bag fresh spinach, 2 cups sliced strawberries, 1 cup cranberries, 1 cup tangerine segments, 1 cup diced peaches, 1/4 cup onion, 1 cup of cooked quinoa.

And for seasoning the salad: 1/2 cup olive oil, 1/4 cup balsamic vinegar, 1 tablespoon honey, 1 teaspoon mustard, salt and pepper

MUESLI

And to finish, a dish for after the sun:

Ingredients (for 2 people): 1 low-fat yogurt, 3 walnuts, 3 almonds, 1 handful pumpkin seeds, 2 tablespoons muesli, 1 handful red fruits.

We say after the sun because nuts and whole-wheat cereals help prevent the skin from peeling and protect it from free radicals. Red fruits repair and regenerate the skin, as well as moisturizing it, imbuing it with elasticity and luminosity.
